Crispiest onion rings

Crispiest onion rings.

Here's how to make the crispiest onion rings! The trick is an ice-cold seltzer batter that puffs up light and crackly in the oil — way better than anything from a drive-thru. Two Osmo salts do the work here: Osmo Roasted Garlic Salt goes straight into the batter, and Osmo Flakey White Sea Salt gets tossed on the rings the second they come out of the fryer.

  2. Nick pours ice-cold water over the separated onion rings.

    Step 02

    Soak in ice cold water

Soak the rings in ice-cold water for 10 minutes. It takes the harsh bite out of the onion and keeps it crisp.

  3. Nick whisks cold seltzer and egg white in a bowl.

    Step 03

    Whisk the wet ingredients

In one bowl, whisk the cold seltzer with the egg white.

  4. Nick shakes Osmo Roasted Garlic Sea Salt from its clearly visible jar into the dry ingredients.

    Step 04

Mix and season the dry ingredients

In another bowl, combine the flour, cornstarch, baking powder, garlic salt, pepper, and paprika.

  5. Nick whisks the wet and dry ingredients into batter.

    Step 05

    Combine the batter

    Step 06

    Heat the oil to 375°F

  7. Nick dips an onion ring into the cold batter.

    Step 07

    Dredge and dip in batter

Dredge each ring in plain flour, dip it in the batter, then drop it straight into the oil. That first coat of flour is what helps the batter grab on.

Notes

Dig in

Pile them high and eat them right away while they're still crackling. Ketchup, ranch, or a little Osmo Magic Sauce on the side — you can't go wrong.

Salt twice

These onion rings get seasoned two ways. Osmo Roasted Garlic Salt goes into the batter so every bite has that savory, toasty garlic flavor built right in. Then Osmo Flakey White Sea Salt goes on at the end, while they're hot and the flakes still stick, for that perfect salty crunch.
